Crab Stuffed Avocados with Melted Cheese

Anyone watching carbs? If you are, you are like me and I’m always on the prowl for satisfying, delicious low carb dishes. Here’s one you can have for lunch, dinner or if made with mini avocados, an appetizer.

Crab stuffed avocados offer plenty of taste and are low carb. Use the mini avocados and serve them for appetizers.

Crab Stuffed Avocados with Melted Cheese

Prep: 10 min.

Cook: 2 min.

Servings: 6

Ingredients:

  • 3 large ripe avocados sliced in half length-wise and pits removed

  • 12 oz. lump crab meat (available canned in the fish section of most grocery stores)

  • 2 tbsp light mayonnaise

  • 1/4 cup mashed avocado you can scoop some flesh from the center of your avocado halves

  • 1/4 tsp garlic powder

  • 2 tsp lemon juice

  • ground black pepper

  • 1/4 cup shredded white cheddar cheese

  • smoked paprika

  • dash of Tabasco

  • 1/2 tsp finely chopped parsley

DIRECTIONS:

  1. Preheat oven to 350°F. Line a large baking sheet with foil or parchment paper.

  2. In a medium bowl, add crab, mayonnaise, avocado, garlic powder and lemon juice. Mix together until thoroughly combined. Add black pepper to season to taste.

  3. Scoop crab stuffing into your avocado halves. Add shredded cheese on top.

  4. Broil for about 2 minutes or until cheese is melted and the crab filling is warm. Garnish with paprika and parsley before serving.
