Easy Grasshopper Cake
Sometimes I get nostalgic for comfort foods from my childhood. I grew up with fboxed cake mix and Cool Whip. Here’s a St. Patrick’s Day dessert that uses those two devine ingredients and is so easy to make.
Easy Grasshopper Cake
Ingredients
Prep: 20 minutes
Cook: 30-40 minutes
Total: 50 minutes
Servings: 8
1 box Trader Joe’s Vanilla Cake Mix (or any other boxed cake mix of your choice, just eliminate the next 3 ingredients and follow the package directions)
2 large eggs
1 stick melted butter (1/2 cup)
1 cup cold milk
green food coloring
1 jar Trader Joe’s Fudge Sauce (10 oz.)
1 tub Cool Whip
Andes Mints (for garnish)
Directions:
Preheat oven to 350 degrees F. Butter a square 8” x 8” glass pan
Make cake according to package directions. Add enough food coloring to get your desired color. Pour batter into prepared pan. Bake for 30-40 minutes until toothpick inserted comes out clean. Cool.
Spread the contents of the fudge jar over the cooled cake, distributing evenly.
Add food coloring to Cool Whip to get your desired color, I think a lighter green works best. Spread over cake and refrigerate.
To serve, cut square of cake and top with chopped Andes chocolate.
Serve with vanilla ice cream if desired.
Note: you can add Creme de Menthe to the cake mix and Cool Whip for added mint flavor.
