Summer is Here - Break out the Popsicles!
Fresh fruit popsicles pack a lot of flavor and are the perfect ice-cold treat for a warm summer day. Follow the simple recipe to create your own variations of this summer favorite.
Fresh Fruit Popsicles
Servings: 4-6 popsicles

Total: 5 Hours, 10 minutes
INGREDIENTS:
FOR EACH LAYER OF FRUIT
1 cup fresh fruit, cut in bit size pieces (raspberries, strawberries, blueberries, blackberries, mango, papaya). Use at least 3 different fruits for stripe effect.
1 teaspoons lemon or lime juice
1 teaspoon honey
DIRECTIONS
In a food process or blender, mix all ingredients until pureed to a thin consistency. See variations for different types of fruit.
pour fruit puree into popsicle molds up to desired amount.
freeze for 20-30 minutes per layer
when the mold is filled to the top, freeze for 3 to 5 hours. Some fruits take longer to set.
VARIATIONS
Coconut - use frozen cubed coconut (Trader Joes), add 1/4 teaspoon lime zest in addition
Banana and Pineapple do not work well.
